Lousiaiana Recipes in October; Ralph Brennan's Creole Jambalaya, George Graham's Fried Eggplant with Crawfish Étouffée, & Smoked Duck and Andouille Gumbo

October 5th 2024 EDT

October 5,  2024 As I write this on Friday, it's raining, but we should have a fairly nice weekend. I'm poaching a chicken and making stock this afternoon, in anticipation of making a chicken matzoh ball soup for dinner tomorrow night. Sounds like just the thing. Temps are going back into the high 80s next week, so it doesn't really feel like fall yet. I've selected some classic recipes this week that I think you'll enjoy. First up is a Creole jambalaya from premiere New Orleans restaurateur Ralph Brennan. I ...Continue Reading

Louisiana Recipes Late Sept. Weekend; Crabmeat Au Gratin, Linda's Shrimp Dip, Chicken Fra Diavolo

September 27th 2024 EDT

September 21,  2024 Jury duty is over! I was dismissed late on Wednesday, so I've done my civic duty for the next 2 years. As I write this on Thursday, our thoughts are with our friends and neighbors over in Florida as hurricane Helene comes ashore, and our friends further inland who are in the path of the storm and facing rain and potential tornadoes. Hopefully next week will look better. I've selected simple recipes this week; Jim's out of town and with me sitting in the courthouse several days I've ...Continue Reading

Louisiana Rceips for first fall day; Two from Chef Eric Cook - Yassa Shrimp & My Mom's Chicken and Dumplings, Cream of Oyster Soup

September 21st 2024 EDT

September 21,  2024 Earlier this week my friend Karen and I took ourselves out to the launch party and book signing for Chef Eric Cook’s (Gris Gris New Orleans) new book, Modern Creole: A Taste of New Orleans Culture and Cuisine. I’ve excerpted two of the recipes below— the book includes recipes for a lot of the dishes on the menu at Gris Gris, most of which I’ve tasted and enjoyed over the years, plus lots more new and interesting things to try. You can purchase a copy for yourself here; there’s even an opti ...Continue Reading

Setp Louisiana Recipes; Chef Tenney Flynn's Southern Shrimp Roll, Roast Salmon with Mustard, Spanish Pork Tenderloin Bites

September 13th 2024 EDT

September 13,  2024 Happily we came through Hurrican Francine, no damage, and we didn't lose power, always a likelihood in a storm like that. Plenty of people weren't nearly that lucky; we went out for a walk yesterday morning and about the only traffic on the streets was power trucks and garbage trucks. For the recipes this week, I'm starting with my friend Tenney's spin on a classic lobster roll using Gulf shrimp and plenty of spices. Next, a simple recipe that is going to deliver dinner party elegance and soph ...Continue Reading

Sept Louisiana Recipes; Chef John Folse's Chicken and Sausage Jambalaya, Parmesan Cheese Grits with Spinach and Shrimp, Grilled Shrimp with Crushed Fresh Tomatoes

September 6th 2024 EDT

September 6,  2024 The weather is marginally cooler this week, so I'm making a big pot of minestrone this afternoon, and started dough for a couple of loaves of bread today. Comfort food! Gumbo up next as soon as it drops below 70 at night. For the recipes this week, there's a fairly light stone-ground grits with spinach and shrimp from Virginia Willis. It'll be great for those of you in cooler parts of the country. Next, a simple dish of grilled shrimp with crushed tomatoes and lots of lime juice; that one ...Continue Reading

Louisiana Recipes Labor Day Weekend; White Bean Shrimp Scampi Stew, Champagne Chicken, Grilled Shrimp, Corn, and Avocado Salad

August 30th 2024 EDT

August 23, 2024 For the recipes this week, simple is the name of the game. It's Labor Day weekend, a long weekend where I try to avoid doing much labor at all. For the first recipe, I've included Ali Slagle's genious take on shrimp scampi. She replaces the traditional pasta with healthier white beans, something we're constantly being told we should eat more of. The dish is generously seasond with garlic and lemon. Next, a dish fit for company, although you'll want 2 bottles of Champagne or prosecco if you do invi ...Continue Reading

Louisiana Recipes in late August; Fresh off the Cobb Corn Chowder, Pasta with Shrimp in Tomato Cream, Spanish-Style Toasted Pasta with Shrimp

August 23rd 2024 EDT

August 23, 2024 For the recipes this week, I started with a dish featuring one of my favorite summer, vegetables, sweet corn. My parents raised an extensive garden every year, including several varieties of corn, so it's something I grew up eating. This one is for a chowder, and it's a little fussy, but the end result with layers of flavors and contrasting textures are well worth the effort. Next, a simple pasta dish in a tomato cream sauce that comes together in about the amount of time it takes to boil a pot of ...Continue Reading

Louisiana Recipes in mid August; Instant Pot or Slow Cooker Braised Pork Manwiches, Cajun-Style Seafood Fettuccine, Creole Shrimp and Grits

August 16th 2024 EDT

August 16, 2024 We took a much-needed vacation last week;  it's been a long year and I really needed the break. We flew into Oaxaca City, Mexico, last Tuesday, and returned Wednesday night. What a beautiful city! There is art everywhere, even the poured concrete sidewalks in many neighborhoods were etched with a decorative design. The people were super friendly, and had a lot of patience with my broken Spanish. On our last afternoon there, we stopped into a well-known chocolateria to pick up some chocolate to ...Continue Reading

August Louisiana Recipes; The Grumpy Lady's Chile Crisp Shrimp Skewers, Cookbook Author Martha Hall Foose's Paper Sack Catfish, Creamy Tuscan Chicken Pasta Bake

August 2nd 2024 EDT

August 2, 2024 The heat here in New Orleans is unrelenting, plus with humidity on top of the heat, we're seeing "feels like" temperatures well over 100F every day. I like to bake bread, and my favorite recipe calls for starting out with water that is 80F; the tap water was hotter than that. I had to add an ice cube to get the correct temperature for mixing the starter. Crazy! For the newsletter recipes this week, I'm ignoring the heat. First up, easy grilled shrimp skewers brushed with my favorite, ...Continue Reading

Louisiana Recipes for late July; Chef John Folse's Redfish Courtbouillon, Rustic Shrimp Bisque, Louisiana Peach Cobbler

July 26th 2024 EDT

July 26, 2024 We are hard at work on a cookbook collection of our best recipes plus some new ones; I was deep in photo shoots last week and forgot to send the newsletter out. We made a yummy asparagus cheese tart with a balsamic glaze, dilly green beans and shrimp, chicken-asparagus roll-ups, a chicken and sausage stew that I absolutely loved, and a Creole tomato relish. This week we're focusing on baking, did a Creole cream cheese cheesecake, sauteed snapper over garlicky spinach, and my dad's ...Continue Reading
