Susan Ford

We had a last-minute family get together at our niece's house on Sunday. The guys cooked amazing wings and smashburgers. I made an amazing "poor man's" lobster mac and cheese using langostino tails in place of lobster because who can afford lobster, and a big fruit salad. Our nephew and his new wife brought dessert, and Jim's sister supplied the beer. It was a nice day; I'm really glad we get to see more of them.

For the recipes this week, first up, catfish fried in the style of the fish taco you'll find all over SoCal and Baja California; the mild sweet fish is a great choice for this treatment. Next, turn your favorite deviled egg recipe into an egg salad, add shrimp, and build yourself a decadent roll. And finally, a personal favorite, grilled steak tips with a zesty anchovy butter. Use plenty of garlic, and have some warm flour tortillas on hand for wrapping everything up.

Enjoy these recipes, stay safe and healthy, and, as always, let me know what's on your mind.

Best regards,

Beer-Battered Catfish Tacos

Beer-Battered Catfish Tacos

Arguably the South's favorite freshwater fish, in this recipe the Southern staple gets introduced to its Southern California/Baja California cousin, the fried fish taco. Meyer lemons can be a bit difficult to find; substitute in regular lemons and start with a bit less lemon juice and zest, as the Meyer lemons are sweeter and less tart.

Shrimp and Deviled Egg Salad Rolls

Shrimp and Deviled Egg Salad Rolls

This could be the star of your next get-together. Two favorites all in one sandwich: Zesty deviled eggs, and perfectly poached shrimp. Keep the salad well chilled before building the rolls. Or stash this away for an hors d'oeuvre; the salad could easily be served on toasted brioche rounds or used as a filling for decadent finger sandwiches.
