Happy February! It's my birthday month, and I thoroughly enjoy it. Mardi Gras is creeping up on us, with parades in the French Quarter in New Orleans and Slidell Saturday night, and more rolling in various parts of the state Sunday. You'll find the full parade schedule here; if you have additions or corrections, let us know.

As I write this letter Wednesday morning, it's rainy and a muggy 75 degrees; tomorrow's high is going to be 60, and will come before daybreak. Temperatures drop from there, I might have to make a pot of my favorite vegetable beef soup for dinner tomorrow night, with a skillet of jalapeño/cheddar cornbread. Now that I think of it, I don't think I've made that all winter, and Jim and I really enjoy it. Done. I'll post pictures to Facebook.

Valentine's Day is next Friday, so I've given you a week's notice to plan a fabulous dinner for the loves of your life- see the filet mignon, and stunning yet easy chocolate cake below. Plus, crawfish season is under way early this year; the savory crawfish bread pudding will be a hit at any Mardi Gras pot luck you attend.

Crawfish season came early this year, but this one you can enjoy year round, utilizing frozen Louisiana crawfish tails. If you don't have access to tasso, sub in diced smoked sausage or ham. As always, check your packaging to ensure the crawfish were harvested in the US, not overseas then packaged here.

Treat your valentine to an extra-special meal with this simple recipe. The key is to buy the best filets your butcher has to offer, and to let sit, seasoned, at room temperature before searing. Top with blue cheese mixture, broil for a few minutes, done. Mashed potatoes whipped with horseradish, steamed asparagus with a little balsamic vinegar, and a light, crisp salad-- perfect Valentine's Day dinner.

Perfect dessert for finishing off a Valentines Day feast! No heart-shaped specialty pan required, just 1 8x8 square cake pan and an 8-inch round cake pan. Personally, I'd swap out sweet little Louisiana strawberries, just hitting the markets now, for the raspberries, but I've never been a fan of raspberries.
