I found grouper on sale earlier this week and put together a spectacular meal; a sheet pan of roasted baby potatoes, grape tomatos, and onion; garlickly sautéed spinach, and a lemon garlic butter sauce to spoon over the roasted fish. Delicious and quick! I'll keep tweaking the meal and have recopes ready for publication in the upcoming Sept/October issue of the magazine.

I got my hands on a flat of Creole tomatoes last weekend and we've gorged on them; I average one a day. BLTs one night, simple platters of sliced tomatoes, cucumbers, and onion, and a sheet pan of them sliced, salted, and roasted in good olive oil with some fresh rosemary, oregano, and garlic added toward the end. I call it tomato candy. I have three left and will be on the lookout for more over the next few days.

And then there was the night we had pancakes, scrambled eggs, and bacon... Cook's night off. Jim's the pancake-maker!

Baked Ziti with Sausage

This hearty dish is great hot out of the oven, but it also serves well at room temperature, making it a great choice to take to a summer potluck. It's got roasted eggplant in it also, always a nice touch with pasta.

If you have leftover chicken or turkey on hand, this dish comes together quickly, and is a plate full of old fashioned comfort food. Use a mixture of mushrooms, and don't skimp on the cheese!

Butter-Poached Shrimp

Butter-Poached Shrimp

This is an easy recipe with a ton of flavor. My favorite version is with shrimp, but it works equally well with mild fish fillets and chicken fillets; cooking time would need to be adjusted. The sauce is eat-with-a-spoon delicious.
