Cursory note from me this week; I'm working long hours to get the next issue of the magazine out the door. Sorry for the brevity, but there are some very good recipes below. 

 

Kevin Temple's recipe for mild fish with lemon butter shrimp is a keeper, the stuffed eggplant and the Creole meatballs are for days you don't mind heating up your kitchen.

Eggplants are in every farmer's market right now, and this is a great recipe for using them up. It's from the classic mid-city New Orleans restaurant, Mandina's. It can be baked in a casserole dish or, as pictured, in a hollowed-out eggplant shell.

Louisiana has a lot of people of Italian heritage; over the years, traditional Italian recipes have taken on a Creole nuance, and this recipe is a good example, with the use of Creole seasoning in an otherwise straightforward tomato sauce.
